Whole30 Approved Homemade Granola Bars

Happy Monday! I hope you are all ready to crush this week! I know it may seem like just another week in isolation, but make some goals this week whether it be fitness, cleaning, activities to do with yourself/your kids, reading, learning something new, etc.

I know I need to smash out some cleaning goals- I keep telling myself the night before, “okay you’re going to clean the bathroom tomorrow. You’re going to vacuum your room tomorrow.” And it just never gets done. I need to plan a specific day to do it and just get it done first thing and then I have the rest of the day to either be productive or do nothing! I’m making sure I’m finding a balance. Some days I like to stay in bed, read and watch Netflix and there are other days where my mom and I will go on long walks for a few hours and do chores around the house.

In my opinion, despite how scary, uncertain, and anxiety ridden this situation is- TRUST ME I’ve broken down a few times already after watching the news or thinking about my loved ones that are working in healthcare- we’ve been given a chance to do things we’ve said we never have time for. I’ve been saying to myself for months how I wish for time to get ahead on my blog, deep clean, and plan out life goals. WELL NOW HERE’S THE TIME!

There’s so many emotions associated with this quarantine- all of your feelings are valid and you are allowed to feel excited about it too. Everything in life has always been uncertain and unknown, just in regard to the covid situation, it’s just brought to our attention and awareness more so than day-to-day uncertainties.

Anywayssss my mom has been asking me for days now to make her some healthy granola bars- she’s obsessed with any bars that I make that she can snack on. I mean, I’m obsessed with them too. Since I’m on Whole30, I decided to make some that were Whole30 approved. The ingredients that I used can be easily swapped with whatever you have in your pantry. Cereal? No problem. Granola you want to turn into granola bars? No problem! Just keep ratios about the same if you can!

Whole30 Approved Homemade Granola Bars


1 cup of mixed nuts* (I bought this from Better Health and it contains- pecans, raisins, almonds, walnuts, cashews, pumpkin seeds but any mixed nuts you have on hand will work)

2 tbsp hemp seeds

¼ cup of almond or coconut flour

2 scoops of collagen (I used Vital Proteins)

6 pitted dates

1 tbsp tahini

2 tbsp almond butter

Dash of cinnamon

*Make sure your mixed nuts do not contain any sugar


Take your six pitted dates and let them sit in a bowl of boiling water for about 10-15 minutes. Fill just enough so the dates are covered. This will allow the dates to soften and easier to blend. While the dates are sitting in water, add the rest of your ingredients into a food processor. It will be easier if you start with dry ingredients and then add your tahini and almond butter. Can also use peanut butter! Lastly, drain the dates and add them into the food processor with the rest of your ingredients.

Blend together to desired consistency. I like to have some chunks of nuts in mine so pulsing for a minute or two worked perfectly. Make sure consistency is sticky. If it is too dry, add a bit of water or an extra date. Add into a baking dish. If you want thicker granola bars, add into a smaller baking dish. If you wish to have thinner bars, add into a larger baking dish. Allow to sit in your fridge for about an hour to harden. Afterwards, cut and enjoy! Leave in the fridge, freezer or let sit wrapped in foil on your counter!

These resemble Larabars so if you’re looking for something to compare them to- the consistency is almost exactly the same!
