Super Easy Mixed Berry Oatmeal Breakfast Recipe

Hello everyone!



I know it’s been so so long since I’ve posted a blog post! Wow, things are just so crazy right now. With the transition to working from home and a lockdown, it’s been a lot to wrap my head around. I’m sure I’m not the only one out there who feels this way. I think now being settled in and knowing it’s going to be a second before we all go back outside- I finally have time to whip out some content. But, it is also so important to focus on your mental health during this time. Take time to go outside (even if it’s sitting on your porch or taking a walk), read a book, or host a Tuesday night FaceTime with your friends- anything to make sure you’re taking extra good care of yourself.



With so much unknown, I went out and bought a decent amount of oatmeal- knowing it would last me a while and I could get creative with it.



So I’m happy to present a super easy breakfast recipe that you can use with oatmeal, granola, chia seeds, whatever makes you happy. The ingredients are sure to last you a while and it’s nourishing!



Don’t forget to nourish your body extra well these days- especially if your workout routine is changing. Keeping your body healthy is key!!



Mixed Berry Oatmeal Breakfast Recipe




Ingredients

-½ cup gluten free oats

-1 tbsp chia seeds

-1 tbsp peanut butter or almond butter

-t tbsp mixed nuts

-½-1 tbsp honey or maple syrup

-dash of cinnamon

-¼ cup frozen blueberries

-¼ cup of raspberries

-dash of almond or coconut milk


Directions

Place your ½ cup of gluten free oats into a bowl and add ¾ cup of water. Microwave for one minute. Take out of microwave and add your chia seeds, peanut butter or almond butter, cinnamon and maple syrup or honey. Mix together.


Add in your mixed nuts, frozen berries and a dash of your milk of choice! Mix together again and voila! There you have a super-simple, under ten minute breakfast!



I love this recipe because if you’re someone who eats breakfast later than normal and you’re already in the hustle of your workday, I want something I can quickly whip up and take back to my computer. Plus I take time in the morning to enjoy my coffee for about an hour or so!
