Raw Peanut Butter Chocolate Energy Bars

Happy Friday!


I hope everyone had an amazing week. This week has been somewhat interesting for me. As I finish out my second week on Whole30 (which I will be providing a full recap of) I took the time to reflect on my digestion. My digestion has been shit this week. Normally I’m constipated most of the time, but this week was the opposite. Normally, I’d be thrilled but that came along with a gurgly stomach and a lot of gas and bloating. At the end of the day, I was super uncomfortable and sleeping with a heat pack on my stomach. Usually at night I drink some sort of digestion-aiding tea and it does the trick in settling my stomach before going to bed, but this week it seemed to do shit.


And I’m totally fine during the day- the whole day I can be feeling great, but then once it hits night, my stomach/intestines flip on me. So reflecting back, it makes me think about food pairing and what I could be doing differently during the day to avoid gas and bloating. Still trying to figure out the best solution.


In other, more positive news, I just received Sarah’s Day Body Bloom!! I’m only on my second day incorporating it into my morning routine- and I’ll be sure to do a full update the changes in about a month or so. I’m so excited as I’ve heard it produces great results! If you haven’t heard of Sarah’s Day, go check her channel for all things health and fitness. Seriously, she’s amazing and one of my inspirations.


Switching gears- I created another recipe! Going with the theme of Monday’s recipe, I made Raw Peanut Butter Chocolate Energy Bars. You keep these bad boys in the fridge and the chocolate gives them the best crunch, while the under layer is chewy and sweet. Another perfect fall snack and midday pick-me-up. To make these paleo, just swap out the peanut butter for another nut butter- would taste great with almond butter!


Raw Peanut Butter Chocolate Energy Bars



Ingredients

Bottom Layer

-2 Cups Pecans

-1 Cup Shredded Coconut

-¼ Cup Raisins

-¼ Cup Melted Coconut Oil

-½ - 1 Cup of Peanut Butter


Top Layer

-2 Cups Melted Dairy Free Chocolate (I used Enjoy Life)


Directions

In a food processor, combine all of the bottom layer ingredients. You want your texture to be sticky and a pretty thick consistency. Add in additional amounts of the ingredients as needed or desired. You can always swap out the raisins for dates- I was just curious if they would act as a similar bind. And they don’t taste raisiny, just gives it a pop of sweetness!


Once everything is combined and to the desired consistency, place into a greased 8x8 or 9x9 pan and pat down. For the grease I used coconut oil. Place in the fridge for at least 20 minutes.


While your bottom layer is in the fridge, melt your chocolate in the microwave mixing it every 30 seconds until completely melted through. Pour on top of your bottom layer, and spread with a spatula to get an even consistency. Throw back in the fridge for at least 30 minutes and keep stored in the fridge!



It’s that simple! As always- gluten free, dairy free, soy free and paleo if you choose another nut butter option!
