Raw Chocolate Chip Cookie Dough Energy Balls

Man, January is just flying by. This year is off to a great start though! I started Whole30 halfway through the month, and I’m super excited that my digestion has been really good, my energy levels are up (even though I still love a good nap), and I’ve been staying super hydrated. More on Whole30 later!
One of my best friends asked me to be her bridesmaid in her wedding later this year- that definitely made my week! I got to relax and unwind this weekend by sitting on the couch and ended up watching all the Hunger Games movies because they were on TV. I got to crank out some work and eat yummy food. The best.
One of the best parts was whipping up some energy balls! Now, I couldn’t try them so I brought them to work and made my coworkers be the judge! All reviews came back positive, so sharing the recipe on the blog! I’ll be sure to make these again once Whole30 is over, but anything chocolate chip and that smells divine is sure to taste good.
These are packed with healthy fats, clean energy, and great for digestion!
Chocolate Chip Cookie Dough Energy Balls
Yields 10-12 Balls
1 cup of gluten free oats
½ cup of coconut (or almond) flour
⅓ cup of coconut sugar
7 pitted medjool dates
½ cup of almond butter
¼ cup of hemp seeds
⅓ cup of coconut oil
½- 1 cup of Enjoy Life Chocolate Chips
Place all ingredients except the chocolate chips into a food processor. Make sure the dates are pitted and the coconut oil is melted. Pulse together until everything is well combined and the consistency is sticky. Add in the chocolate chips and pulse together until chocolate chips are at desired chunk size.
Grab a small-medium cookie scoop and roll into balls within your palm. Place on a baking sheet and either place in the fridge or porch to harden. Leave for at least thirty minutes or over night.
Then eat all of them. Don’t share.
