Paprika Pina Colada For Cinco de Mayo
I hope your Monday is off to a great start and you enjoyed the weather this weekend. I’m sure normally this would be the weekend to go out to the bars to celebrate Cinco de Mayo, but obviously that’s not happening. You can still celebrate from the comfort of your home and hopefully the weather will be nice enough to sip on a cocktail on your porch or driveway.
It’s kind of perfect that Cinco de Mayo is falling on a Tuesday so you can also properly celebrate Taco Tuesday as well!
I have a little boozy recipe for you- my first I know!! I was so excited to make this recipe and was definitely a hit in my house. It’s a different take on a classic drink, so I hope you like it. I know it won’t disappoint!
Paprika Pina Colada
½ cup coconut milk
½ cup coconut water
1 frozen banana
1 shot patron mango liqueur
3- 4 shakes of paprika
1 ½ cups pineapple chunks (can be frozen if want thicker consistency)
Place all ingredients into a blender, more shots if you’re feeling real frisky, and blend until desired consistency! You can even add ice if you want, but the banana makes your drink cold enough and just the right amount of creaminess.
I know, I know, patron usually isn’t the alcohol you’d use in a Pina Colada, more like rum. But I was feeling experimentive (is that a word?) and it seemed to really turn out well. So give it a shot because you’ve got the time being at home and it’s always fun to experiment with alcohol. I mean that in a completely safe way.
So cheers to your Cinco de Mayo, and if you can’t be on a beach this year eating tacos and drinking a Pina at least you can pretend, right?
