Gluten-Free and Dairy-Free Slutty Brownies!

This past weekend, my coworkers and I threw one of our other coworkers a surprise bridal shower! She was so surprised! My friends were requesting my raw blondies for the party, but I wanted to make something different. One of them said she had been craving slutty brownies- brownies I remember making in high school all the time. They are brownies with oreos in the middle of them. They are out of this world. Of course I wanted to make them dairy-free and gluten-free. I knew there had to be some gluten-free oreos out there. Lone and behold after doing a little digging and meticulously searching the isles of the grocery store- I was able to create the *almost* perfect dairy-free and gluten-free slutty brownies!
This Monday morning is off to a great start! It’s a bit ironic how last week I posted my digestive health journey and this past weekend has been a shit show. Not literally. Saturday night I was on my floor with my mom crying for a while, unable to move I was in so much stomach pain. She got me a heating pad and some licorice and mint tea to ease the pain. It was just one of those moments where everything just comes together and it’s your final straw. I felt so defeated and deflated and felt like I’d never move past this stage in my life. I feel so consumed with worrying about my digestion and you just never know when the pain is going to hit. It wasn’t even the kind of pain where I felt like I needed to pass a bowel- it was just sharp pain and pressure around my organs. I went to bed feeling discouraged, but had big day with my job the next morning so I knew I had to push through. I realized I need to be doing even more to take care of and heal my body. It’s so hard to do in the moment or carve in time to rest when you really just want to go, go, go!
Anyways, back to my morning. After resting yesterday after a long work day, I woke up and took a workout to hopefully wake up my system and move my body, got some work done and made it to my weekly Monday nannying at 7:30am! The day has so much potential! Yes, this weekend may have been tough, but this week holds so much opportunity to make it better and will allow me to take the steps I need to heal. This week I’m planning on spending plenty of time in the sauna, drinking TONS of water (making my coworkers hold me accountable), moving my body, and a potential juice cleanse!
Now onto the recipe!
9x9 inch pan
Yields 12-16 brownies
-Simple Mills Brownie Mix
-3 TBSP Water
-⅓ Cup Coconut Oil (Melted)
-9 Gluten Free/Dairy-Free Oreos (I just found a generic store brand, but all with clean ingredients)
-¼ Cup of Enjoy Life Chocolate Chips
So I usually never follow the instructions on the back of the box and just do my own thing, and they still turned out amazing! First, preheat your oven to 350 degrees.
Take the brownie mix and added in the eggs, water and coconut oil into a large bowl and whisk it all together. Once well combined, grease your pan with some coconut oil or butter.
Pour in half your brownie mixture, leaving the other half in your mixing bowl. Cover the bottom of the pan and evenly spread the brownie mix. Once evenly spread, place your oreos into the pan, evenly distributed.
Add the second half of your brownie mixture into the pan and spread on top of the oreos. Evenly distribute.
Once completed you can sprinkle chocolate chips on top and add as much as your heart desires! Trust me, it gives the brownies just a little extra creaminess.
Bake the brownies for about 30-36 minutes. Let cool before removing or you can leave them in the pan overnight, but be sure to refrigerate them. And voila, you’re done!
