Cherry Granola Chocolate Bark!

The weekend is finally here, and as promised the recipe for my Cherry Granola Chocolate Bark is up!
This one will be short and sweet as I'm sure everyone is racing to get Christmas shopping done (as well as myself)
So here we have it-
Cherry Granola Chocolate Bark
1 bag of Enjoy Life chocolate chips (semi sweet)
1 box of Loving Earth dark chocolate
1/2 cup of dried cherries
1/2 cup of cashews
1/2 cup of gluten free oats
1/4 cup of shredded coconut
1/4 cup of honey
Take your cherries, cashews, gluten free oats, coconut and honey and add into a food processor. Pulse a few times until well combined. Still chunky but sticking together from the honey. Add more honey if desired.
Take an 8x8 baking dish and line with parchment paper.
Add Enjoy Life chocolate chips and Loving Earth dark chocolate bar into medium size bowl and microwave in 30 second increments, stirring after each set. Once fully melted scoop the chocolate into the 8x8 baking dish and carefully even the chocolate out with a spatula in the baking dish. Then sprinkle the granola onto the chocolate with your fingers and add as desired.
Place in the fridge to set for at least an hour. Once you are ready to serve, remove the parchment paper from the dish and cut vertically along the bark or break with your hands. Keep in the fridge to preserve!
