Cherry Chocolate Acai Granola Bars!

Happy Thursday!


Cheers for the (almost) weekend. Last weekend before Christmas, and I still have so much to get done. But of course I'm here laying in bed sick with a stomach bug. My plan was to go skiing for the day tomorrow but with the way I'm feeling, that's not going to happen.


I'm feeling much better than I was this morning, and still have a hair appointment in the books for tonight. Sometimes I really hate being sick because it just throws all your plans out the window. I was going to work out today, get more stuff done and maybe some shopping but all I want (and need) to do is lay in bed with my heater on. I finally rolled out of bed this afternoon to go downstairs to grab my laptop and post this blog. Baby steps!!



I'm trying to learn to not be so hard on myself. No, the day did not go as planned, and I won't be able to get the shit done I was hoping, but your body needs what it needs. I wouldn't be doing myself any favors by forcing a workout or forcing myself to head to the mall. It would just make me feel worse. I only have enough energy to go to my hair appointment later. That's easy because all I have to do is sit there. I don't even want to shower. My motivation level is great today- but hey I'm sick so I can lay here all day.




Thankfully I whipped up this recipe a few days ago. I bought a bag of dried cherries from Trader Joe's a few days ago. I was so excited because I found dried fruit that didn't have extra sugar in it!! So I knew I needed to make a recipe out of them. If you need an easy snack or Christmas recipe, this one's for you! These taste like Why Bars, but with better ingredients and they're gluten free! Super chewy- I love leaving them on our back porch or the fridge so they're cold and it just makes them taste 10x better.


So enough about me being sick or Christmas almost being here- here's a great recipe for ya with a pretty long name.




Cherry Chocolate Acai Granola Bars

Yields 10 bars from an 8x8 baking dish




Ingredients

2 cups of gluten free oats

2 tbsp of Tropeaka acai powder

1/2 cup of dried cherries

2 tbsp chia seeds

2 tbsp hemp seeds

1/4 cup of melted coconut oil

1/4 cup of maple syrup

1/2 cup of Enjoy Life chocolate chips (mini)






Directions



Add all ingredients except dried cherries and chocolate chips into a large mixing bowl. Combine together with a spatula. Once ingredients are mixed together, add into a food processor and pulse around 5-10x. Add in the dried cherries and chocolate chips. Process until all well combined and a finer texture.




Make sure the consistency is sticky. If not, add more coconut oil or maple syrup. Can add dates instead of maple syrup for sweetness.


Prepare an 8x8 baking dish. Place parchment paper into it first, then pour in the granola bar mixture. Pat down evenly into the dish. Place into the fridge for at least an hour to let harden and sit.


Once ready to take out of the fridge, lift up by the parchment paper and cut vertically with sharp knife and your granola bars are ready to serve! Keep in the fridge our outside in the cold to preserve! Super easy snack for you to enjoy!
